How I surprised my mum on this special day…

Although our mums deserve attention everyday, I do like the fact that there’s one day a year on which we show them some extra love and gratitude. Every since my sis & I were young, we prepared breakfast for the whole family on Mother’s day and bought or crafted presents. It’s funny to look back at pictures and see how things gradually changed over the years. I remember being very proud of making our own strawberry smoothies or baking an omelette. We usually challenge ourselves to create something different every year!

Since my sis is currently studying abroad, the breakfast task was all up to me this time. I decided to go for seasonal fruit with a touch. Strawberries are currently all over the place, and a match made in heaven with chocolate… Therefore, I melted a piece of dark chocolate from Tony’s Chocolonely and poured it over strawberry/kiwi/grape skewers. To top it off, I sprinkled grated almonds for some extra bite.

Baking an egg-quiche is quite simple, and a convenient way to serve a lot of veggies to people without them realizing it. The combination of great flavors & texture does the trick. What I used: 4 eggs, a dash of milk, mushrooms, bell pepper, cherry tomatoes, fresh parsley and Italian herbs. I baked the veggies for 3-4 min. and mixed the other ingredients in a bowl. After that, I put all ingredients together in a small baking dish and let the quiche bake in the oven for about 40 min (180C). Super easy, and very tasty!

All in all, we started our Sunday in a pleasant way. My mum was super happy, and that’s all that matters… ♥
Lots of love,
Manisha
